Smoked Salmon and Cream Cheese Bagels

All you need is fresh smoked salmon, a tub of cream cheese and bagels and you’re good to go. You can lightly toast the bagels, and then, instead of using butter, simply smear cream cheese on them and top with smoked salmon.

Mushroom and Feta Omelettes

Some say that breakfast is the most important meal of the day and a great-tasting omelette is sure to out a smile on your face. Simply whisk 2-4 eggs in a bowl with a dash of milk, and then put the mixture into a non-stick pan, like a pancake. When it’s cooked through, you can fill with fried mushrooms, grated cheese and feta, and fold it over to finish it off.

Fruit Salad and Yogurt

This might sound boring, but it can be delicious, especially if you use some of the more exotic fruits. You can also create a very pleasing design with the different colours of fruit and can create layers of honey, muesli and yogurt in between.

All you need to do is grease up a muffin pan and layer bacon round the edges. Then pop an egg in the middle and bake at 180 degrees for 10 minutes.

Strawberries and Cream

If you’re looking for a truly decadent way to start the day (and one that is easy too), this is it. There is no recipe required and no cooking time either.

Mexican Eggs

Essentially breakfast nachos, Mexican eggs are scrambled eggs on top of nacho chips, dressed with diced tomatoes and sprinkled with melted cheese. If you’re brave, you can even add a chilli or two or a few drops of spicy salsa, and if you love sour cream, this also goes well on top.
